Easy dinner (Recipe DIY)

I sort of made this recipe up, but I sort of didn’t.  It is basically the leftovers of a previous meal thrown into a bowl and ‘reworked’.  (The previous meal was Potato Skins with Tomato and Sweetcorn Salsa, and it was really, really good.)

You will need:

  • mashed potato or the cooked flesh of some potatoes (mine was the insides of baked potatoes)
  • kidney beans, drained and rinsed
  • sweetcorn, tinned or frozen (but defrosted)
  • a pepper, chopped
  • two tomatoes, chopped
  • an onion, chopped
  • salt and pepper
  • grated cheese

Okay, basically just throw all of these things except the cheese, into an oven-proof dish, mix, top with the cheese and bake in the oven for about 20-30 minutes.

I ate mine from the bowl with a fork.  It was goooood.

Yes, it is very random, but I am a student, and nothing goes to waste!
P.S. Do you like my new bowl?  I found it, along with two ramekins, in a charity shop for £2.99. It was a good day for thrifting :)
